Tomato sauce recipe includes 2 pounds of ripe tomatoes, 1/4 cup of olive oil or mustard oil, chopped onion, minced garlic, salt, black pepper.

In a large pot, heat the olive oil over medium heat. Cook for 5 minutes, or until the onion has softened. Cook for another minute after adding garlic.

In a pot, boil tomatoes, oregano, salt, and pepper. Reduce heat, simmer for 1 hour, or until tomatoes break down and the sauce thickens.

Cook for 1 minute more after adding the basil then allow the sauce to cool slightly before using.

Tomato sauce leftovers can be kept in an airtight jar in the refrigerator for up to 5 days.
